Cuando las verduras est\u00e9n pochadas, a\u00f1adir las setas laminadas y saltearlas durante unos minutos. Por otro lado, cocer las casta\u00f1as peladas en una olla con un litro y medio de agua durante 50 minutos.<\/p>\n<p>Cuando las casta\u00f1as est\u00e9n blandas a\u00f1adir las setas y la nata para cocinar. Remover bien y dejar la cocci\u00f3n otros 15 minutos. Salpimentar al gusto. A\u00f1adir un poco de agua si fuera preciso.<\/p>\n<p>Finalmente, pasar la mezcla por un colador chino o batidora o y servir. Una vez dorada la carne, a\u00f1adir la cebolla, el puerro y la zanahoria picados y sofre\u00edr. Cuando est\u00e9n pochadas las verduras, a\u00f1adir el vino tinto junto con el agua. Dejar cocer unos 50 minutos a fuego bajo.<\/p>\n<p>Una vez la carne est\u00e9 blanda, desmigarla y mezclarla con el tomate triturado. Reservar las verduras de la cocci\u00f3n para la salsa.<\/p>\n<p>Por otro lado, cocer las l\u00e1minas de pasta de los canelones durante 10 minutos y rellenarlas con la carne. Disponer los canelones en una fuente de horno.<\/p>\n<p>Finalmente, preparar una salsa triturando las verduras de la cocci\u00f3n y verterla por encima de los canelones.
