Estas muertes se podr\u00edan evitar si los pa\u00edses que presentan un mayor consumo prohibieran la utilizaci\u00f3n de aceites parcialmente hidrogenados, su principal fuente.<\/p>\n<h2 lang=\"zxx\"><span class=\"ez-toc-section\" id=\"Prohibicion_de_la_grasa_trans_en_Estados_Unidos\"><\/span>Prohibici\u00f3n de la grasa trans en Estados Unidos<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p lang=\"zxx\">En junio de 2018 entr\u00f3 en vigor la prohibici\u00f3n por parte de la FDA (Food and Drug Administration) de las grasas trans artificiales. Estados Unidos se une as\u00ed a pa\u00edses como Canad\u00e1 y Dinamarca que ya emprendieron acciones contra este tipo de grasa en el pasado. En este sentido, se impide la utilizaci\u00f3n de grasas parcialmente hidrogenadas, la principal fuente de <strong>\u00e1cidos grasos trans<\/strong> en los alimentos.<\/p>\n<p lang=\"zxx\">En la Uni\u00f3n Europea y en Espa\u00f1a nunca se lleg\u00f3 a prohibir o limitar el uso de este tipo de grasa. Solo existen restricciones para algunos alimentos espec\u00edficos, como los preparados para lactantes. Ni siquiera se consider\u00f3 la obligatoriedad (ni la voluntariedad) de incluir <a href=\"https:\/\/www.sanalala.es\/en\/etiquetado-que-dice-el-dni-de-los-alimentos\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #0000ff;\"><strong>en el etiquetado<\/strong><\/span><\/a> la cantidad de grasas <em>trans<\/em> presente en los alimentos.<\/p>\n<h2 class=\"western\" lang=\"zxx\"><span class=\"ez-toc-section\" id=\"Que_son_las_grasas_trans\"><\/span>Qu\u00e9 son las grasas trans<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p lang=\"zxx\">La grasa trans o \u00e1cidos grasos trans (AGT) son un tipo particular de \u00e1cidos grasos insaturados (con dobles enlaces de carbono). La configuraci\u00f3n trans se diferencia de la cis (la versi\u00f3n \u00absaludable\u00bb) en su disposici\u00f3n espacial.<\/p>\n<figure id=\"attachment_1006\" aria-describedby=\"caption-attachment-1006\" style=\"width: 323px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1006\" src=\"https:\/\/www.sanalala.es\/wp-content\/uploads\/Cis_trans.png\" alt=\"acido graso trans\" width=\"333\" height=\"231\" srcset=\"https:\/\/www.sanalala.es\/wp-content\/uploads\/Cis_trans.png 333w, https:\/\/www.sanalala.es\/wp-content\/uploads\/Cis_trans-300x208.png 300w\" sizes=\"auto, (max-width: 333px) 100vw, 333px\" \/><figcaption id=\"caption-attachment-1006\" class=\"wp-caption-text\">Disposici\u00f3n cis y trans de un \u00e1cido graso<\/figcaption><\/figure>\n<p lang=\"zxx\">Algunos AGT se producen industrialmente. La principal fuente diet\u00e9tica de AGT industriales son los aceites parcialmente hidrogenados utilizados sobre todo en margarinas y boller\u00eda.<\/p>\n<h2 class=\"western\" lang=\"zxx\"><span class=\"ez-toc-section\" id=\"Grasa_trans_alimentos_que_la_contienen\"><\/span>Grasa trans: alimentos que la contienen<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p lang=\"zxx\">Existen 3 v\u00edas principales para que aparezcan \u00e1cidos grasos trans en los alimentos:<\/p>\n<ul>\n<li lang=\"zxx\">Por medio de la transformaci\u00f3n bacteriana de \u00e1cidos grasos insaturados en el est\u00f3mago de animales rumiantes (que pasan a la carne y a la leche).<\/li>\n<li lang=\"zxx\">Por medio de la hidrogenaci\u00f3n industrial de aceites para producir grasas s\u00f3lidas o semis\u00f3lidas de uso en margarinas, mezclas de grasas y boller\u00eda.<\/li>\n<li lang=\"zxx\">Durante la <a href=\"https:\/\/www.sanalala.es\/en\/el-mejor-aceite-para-cocinar\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #0000ff;\"><strong>fritura con aceites<\/strong><\/span><\/a> a altas temperaturas.<\/li>\n<\/ul>\n<p lang=\"zxx\">Las reducciones del contenido en grasa trans de alimentos se centra en la producida industrialmente, ya que la proporci\u00f3n de AGT puede modificarse. Sin embargo, la proporci\u00f3n en las grasas de rumiantes es relativamente estable.<\/p>\n<p lang=\"zxx\">Los aceites parcialmente hidrogenados contienen <a href=\"https:\/\/www.sanalala.es\/en\/cual-es-grasa-buena\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #0000ff;\"><strong>grasas saturadas e insaturadas<\/strong><\/span><\/a>, entre ellas AGT en proporciones variables, que pueden llegar hasta m\u00e1s del 50 %, seg\u00fan la tecnolog\u00eda de producci\u00f3n utilizada.<\/p>\n<h2 class=\"western\" lang=\"zxx\"><span class=\"ez-toc-section\" id=\"Grasa_trans_la_peor_grasa_para_la_salud\"><\/span>Grasa trans, la peor grasa para la salud<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p lang=\"zxx\">En la mayor\u00eda de pa\u00edses occidentales se ha reducido enormemente el contenido en \u00e1cidos grasos trans en las \u00faltimas d\u00e9cas. Sin embargo, en pa\u00edses del medio oriente, India e Ir\u00e1n, entre otros, este tipo de grasa est\u00e1 muy presente en multitud de alimentos.<\/p>\n<p lang=\"zxx\">Debido a ello, la OMS ha presentado un programa para eliminar la grasa trans de los alimentos producidos industrialmente en el plazo de 5 a\u00f1os, por medio del plan <a href=\"http:\/\/www.who.int\/news-room\/detail\/14-05-2018-who-plan-to-eliminate-industrially-produced-trans-fatty-acids-from-global-food-supply\"><span style=\"color: #21409a;\"><b>REPLACE<\/b><\/span><\/a>.<\/p>\n<p lang=\"zxx\">La grasa trans aumenta los niveles de <a href=\"https:\/\/www.sanalala.es\/en\/bajar-el-colesterol-sin-medicamentos\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #21409a;\"><b>colesterol LDL<\/b><\/span><\/a> (colesterol malo) y reduce los viveles de colesterol HDL (colesterol bueno), incrementando el riesgo cardiovascular. Estos efectos son dosis-dependiete, por lo que a un mayor consumo, existir\u00e1 un mayor riesgo.<\/p>\n<p lang=\"zxx\">Las evidencias son m\u00e1s d\u00e9biles en cuanto a una posible relaci\u00f3n entre la ingesta de grasa trans y el <strong>riesgo de padecer c\u00e1ncer<\/strong>, <strong>diabetes tipo 2<\/strong> o <a href=\"https:\/\/www.sanalala.es\/en\/tipos-de-alergia-sintomas-y-tratamiento\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #0000ff;\"><strong>enfermedades al\u00e9rgicas<\/strong><\/span><\/a> como el asma.<\/p>\n<p lang=\"zxx\">Finalmente, algunas investigaciones sugieren que la ingesta de grasas trans a niveles cercanos al l\u00edmite considerado aceptable (el 1 % de la energ\u00eda de la dieta) puede afectar de manera perjudicial a otros aspectos de la salud, como es el caso de la funci\u00f3n reproductora.<\/p>\n<h3 class=\"western\" lang=\"zxx\"><span class=\"ez-toc-section\" id=\"Grasa_trans_artificial_y_grasa_trans_animal\"><\/span>Grasa trans artificial y grasa trans animal<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p lang=\"zxx\">La grasa trans de origen industrial y la de origen animal parecen mostrar efectos adversos comparables sobre el colesterol sangu\u00edneo. Sin embargo, la ingesta de \u00e1cidos grasos trans de origen animal suelen ser estables e inferiores al 1 % de la energ\u00eda de la dieta, por lo que su impacto sobre la salud suele ser limitado. En general, la ingesta de grasa trans procedente de rumiantes no se contempla como un importante problema de salud p\u00fablica.<\/p>\n<h2 class=\"western\" lang=\"zxx\"><span class=\"ez-toc-section\" id=\"Cuanta_grasa_trans_se_puede_comer\"><\/span>Cu\u00e1nta grasa trans se puede comer<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p lang=\"zxx\">Eliminar las grasas trans, utilizadas principalmente para alargar la vida de los alimentos procesados, puede ser la manera m\u00e1s f\u00e1cil de mejorar la salud de mucha gente en el mundo.<\/p>\n<p lang=\"zxx\">Las recomendaciones de salud p\u00fablica hablan de disminuir los niveles de ingesta de grasas trans por debajo del 1 % del total de la energ\u00eda de la dieta. Esto se lograr\u00eda, principalmente, por la reducci\u00f3n de la grasa trans de origen industrial. En una dieta de 2.000 kcal esto supondr\u00eda un l\u00edmite de poco m\u00e1s de 2 g de \u00e1cidos grasos trans al d\u00eda.<\/p>\n<p lang=\"zxx\">En los \u00faltimos 20 a\u00f1os se han reducido sustancialmente los contenidos de grasa trans en los pa\u00edses occidentales. Sin embargo, todav\u00eda hay algunos alimentos en los que se puede encotrar grasa trans en cantidades relativamente altas. Entre ellos hay que incluir la mantequilla, los alimentos precocinados, tartas y pizzas congeladas, entre otros.<\/p>\n<p lang=\"zxx\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1424 alignnone\" src=\"https:\/\/www.sanalala.es\/wp-content\/uploads\/Infografia-grasa-trans_ok-compressor.png\" alt=\"grasa trans\" width=\"631\" height=\"900\" srcset=\"https:\/\/www.sanalala.es\/wp-content\/uploads\/Infografia-grasa-trans_ok-compressor.png 631w, https:\/\/www.sanalala.es\/wp-content\/uploads\/Infografia-grasa-trans_ok-compressor-210x300.png 210w\" sizes=\"auto, (max-width: 631px) 100vw, 631px\" \/><\/p>\n<h2 class=\"western\" lang=\"zxx\"><span class=\"ez-toc-section\" id=\"Consumo_de_grasa_trans\"><\/span>Consumo de grasa trans<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p lang=\"zxx\">Las estimaciones sobre el consumo de \u00e1cidos grasos trans son muy variables dentro del seno de la Uni\u00f3n Europea y a nivel mundial.<\/p>\n<p lang=\"zxx\"><a href=\"http:\/\/www.mdpi.com\/2072-6643\/9\/8\/840\"><span style=\"color: #21409a;\"><b>En un estudio comparativo reciente<\/b><\/span><\/a>, de los 29 pa\u00edses estudiados, 22 mostraban un consumo de grasa trans inferior al 1 % de la energ\u00eda total de la dieta.<\/p>\n<p lang=\"zxx\">Sin embargo, destacan pa\u00edses como Ir\u00e1n, con un consumo de grasa trans que supera el 4 % del total de energ\u00eda de la dieta. L\u00edbano est\u00e1 por encima del 2 % y Brasil, Costa Rica, Canad\u00e1 y Estados Unidos por encima del 1 %.<\/p>\n<p lang=\"zxx\">En Espa\u00f1a, las estimaciones se\u00f1alan un consumo que supone el 0,8 % de la energ\u00eda total de la dieta, si bien son datos de un estudio de 2003 que inclu\u00eda una muestra no homog\u00e9nea del territorio espa\u00f1ol.<\/p>\n<p lang=\"zxx\">En cualquier caso, el contenido en <a href=\"http:\/\/www.aecosan.msssi.gob.es\/AECOSAN\/docs\/documentos\/nutricion\/Informe_AGT2015.pdf\"><span style=\"color: #21409a;\"><u><b>\u00e1cidos grasos trans de los alimentos en Espa\u00f1a<\/b><\/u><\/span><\/a> se puede considerar bajo en general. Adem\u00e1s, su evoluci\u00f3n parece disminuir progresivamente en el tiempo, seg\u00fan datos del Ministerio de Sanidad.<\/p>","protected":false},"excerpt":{"rendered":"<p>La grasa trans es el tipo de grasa m\u00e1s perjudicial para la salud.
